The Cowboy steak's name comes from its size – it’s typically a larger steak, large enough to feed a Cowboy, who presumably would have amassed quite an appetite out on the ranch all day. Think John Wayne walking into the town eatery and saying "Cut me a thick one, Rosie." Well the days of the John Wayne styled cowboy may be gone with the wind, but the Cowboy Steak remains. With this cut, we are honoring an American classic, while updating it with the latest in dry aging technology, and created a new take on an old standard. This steak has more character and taste than possibly anything else we sell.
